Oh, and what makes a good hot cross bun?
* fruit is NECESSARY
* fruit should be used sparingly
* spice is the key
* ‘doughy’
* fresh
* not from a supermarket
* not over-baked (i.e. crispy tops are wrong)
* lots of them
